Instead of buying (and spending way too much money on) plastic packed energy bites, start making them yourself! This way YOU get to choose the flavor you like. Simply mix together nuts & dried fruit and add your favorite spices. Still have some gingerbread spice left? Use it! Do you like it spicy? Add some cayenne pepper or chili! How about cacao, lemon, pumpkin pie spice…the possibilities are endless.
Without doubt, energy bars or balls like “Lärabar”, “RawBite” etc. are very convenient when you’re out and about and care for a little snack. But in the long run this wouldn’t be the thriftiest way – both, money wise, as well as with regard to all the plastic waste. Making them yourself though is super easy and using your favorite spices and toppings even lets you create fancy little balls. Add a dash of amaretto or roll them in shredded coconut or dried raspberry powder – let your creativity run wild.
Here’s the hook: you really need a food processor for this recipe. But I’m sure I’ll find a solution for how to make similar energy bites without one anytime soon. Until then, you can try making these delicious coconut almond bliss balls (aka Raffaello), which may not be as healthy as the energy bites here, but at least they’re better than the original.
I soak the dates in warm water for a few minutes before adding them to the food processor together with the nuts and a pinch of salt (which enhances the sweetness of the dates). When the mixture begins to stick together when I press it between my fingers, I make about 15 balls or alternatively form 5 bars. When the mixture seems too sticky, simply add a few more nuts and vice versa, if it seems too dry, add a few more dates.
You only need a few healthy ingredients to make energy bites yourself. With this recipe you can make bars for on the go, save money and reduce plastic waste.
