Granola bars are the perfect in-between snack. And while buying them at the supermarket may come in handy, these granola bars aren’t very healthy most of the time. Instead of buying them, you can actually make them at home yourself. They’re pretty quick and easy to make, very versatile and you’ll always know exactly what’s in them. Cutting them into individual bars makes them very portable, which is very important when you’re like me and out and about a lot.

Preparation only takes a few minutes and the oven takes care of the rest. The best thing though: you get to decide what’s going to be inside. Not only are the nuts/ seeds and dried fruits interchangeable, you can use any kind of liquid sweetener according to your taste. I chose to share my two favorite granola bar recipes with you, which couldn’t be any more different. The quinoa cacao nibs bars are rather rough and crunchy, while the fruity apple bars are pretty sweet and rather chewy. I love them both and couldn’t decide on just one of them. So there you have it! Not only are these homemade granola bars healthy, but also quick and easy to make and very versatile. It's the perfect portable in-between snack.
These bars are rather crunchy and not as sweet as the fruity bars.
- 1 cup oats
- 4 tbsp puffed quinoa (or puffed rice)
- 4 tbsp cacao nibs (or chocolate chips)
- 1 tsp cinnamon
- a dash of salt
- 6 tbsp almond butter
- 3-4 tbsp maple syrup

Preheat the oven to 350° F (180° C) and line a baking dish with parchment paper.

To a large bowl add oats, quinoa, cacao nibs, cinnamon and salt, and mix to combine.

In a separate bowl, mix together almond butter and maple syrup. Then add this mixture to the large bowl with the dry ingredients. Mix thoroughly and knead with your hands.

Add this mixture to the baking dish and press firmly with your hands or some kind of kitchen equipment.

Bake for 20 minutes at 350° F or until golden brown.

Take the baking dish out of the oven and let cool for 5 minutes. Then cut into individual bars. Important: don't let the mixture cool for too long, otherwise you'll end up with a huge granola bar, which could, alternatively be broken into granola chunks.

Theses granola bars are on the soft and sweet side.
- 1 apple
- a splash of lemon juice
- 1/3 cup nuts
- 1/4 cup sunflower seeds
- 1 cup dried fruits (I use goji berries and sultanas) (150 g)
- 3/4 cup rolled oats (75 g)
- 3/4 cup quick oats (75 g)
- 2 tbsp maple syrup

Preheat the oven to 350° F (180° C) and line a baking dish with parchment paper.

Grate the apple and mix together with some lemon juice. Chop nuts, seeds and dried fruits.

In a large bowl, combine all the ingredients. Mix well, kneading with your hands, then firmly press the mixture into the baking dish.

Bake for 30 minutes at 180° C.

Take out of the oven and let cool a little. Whilst still warm, cut into individual bars.
