Not only are these homemade granola bars healthy, but also quick and easy to make and very versatile. It's the perfect portable in-between snack.
These bars are rather crunchy and not as sweet as the fruity bars.
Preheat the oven to 350° F (180° C) and line a baking dish with parchment paper.
To a large bowl add oats, quinoa, cacao nibs, cinnamon and salt, and mix to combine.
In a separate bowl, mix together almond butter and maple syrup. Then add this mixture to the large bowl with the dry ingredients. Mix thoroughly and knead with your hands.
Add this mixture to the baking dish and press firmly with your hands or some kind of kitchen equipment.
Bake for 20 minutes at 350° F or until golden brown.
Take the baking dish out of the oven and let cool for 5 minutes. Then cut into individual bars. Important: don't let the mixture cool for too long, otherwise you'll end up with a huge granola bar, which could, alternatively be broken into granola chunks.
