Summer is right around the corner and because I can’t only live on my healthy Magnum or Ben & Jerry’s copycat ice cream, I always try to create nice cream variations (in case you haven’t heard of nice cream yet: it’s simply ice cream made of frozen bananas). So currently I’m in love with this pistachios rosewater ice cream, which is Persian-inspired and therefore tastes refreshingly oriental. It’s super quick and easy to make, which is why I have to stop myself from eating it every day. Actually, this wouldn’t even be a big deal, as this pistachio ice cream is made of three healthy ingredients: besides bananas, which btw you should always keep in your freezer at all times, you’ll need pistachios and rosewater. Lo and behold!
You can make healthy vegan ice cream without a machine. You'll only need a food processor or a good blender for this pistachio (n)ice cream recipe, as well as three healthy ingredients. Serve as a soft serve three minutes later, right after making it or freeze and enjoy later.
- 1/4 cup pistachios (unsalted!)
- 2 frozen bananas
- 1 tbsp rosewater

Roughly grind pistachios in a food processor or blender.

Add bananas and blend until creamy.

Add rosewater and pulse a few more times to blend in.

Enjoy as is (as soft serve) or freeze for at least 1 hour.
