This Indian inspired potato and lentil stew is the perfect comfort food for cold winter nights. It's super flavorful, warming and just satisfying.
Add lentils and potatoes to a large pot with about 4-4,5 cups of water (depending on size of potatoes). Add onion, garlic and bay leaves and bring to a boil.
Add all the other ingredients except for the salt. Cover the pot with a lid and reduce the heat. Simmer, stirring regularly, for about 30 minutes or until the lentils and potatoes are just tender, adding more water as necessary.
Take off the heat and add salt (and any other spices) to taste. Let steep for 10 minutes.
Remove bay leaves before serving. Optional: garnish with cilantro and serve with rice or (naan) bread.
