Edible Gifts: Homemade Gingerbread Spice

Gingerbread spice is the essential ingredient for German gingerbread (Lebkuchen), which you should give a try ASAP, if you haven’t already. It’s my absolute favorite Christmas recipe. However, you can add this christmassy gingerbread spice blend to any other sweet dish, like pancakes, cookies, créme brûlée but also to sauces and curries. In Germany you can buy gingerbread spice just like you can buy pumpkin pie spice in the States. It comes in a very small amount though, which can become quite pricey and inconvenient if you want to use it a lot, which you will once you’ve tried it, trust me! But I’ve got some good news for you: it’s ridiculously easy and quick to make yourself. In just a few minutes you’ll have a wonderful spice mix which you can, as always, adjust to your liking. This gingerbread spice also makes a great edible gift that you can bring to Christmas parties.

Ingredients
  • 5 tbsp cinnamon, ground (or grind cinnamon sticks) (35 g)
  • 1 1/2 tsp cardamom, ground (4 g)
  • 1 tsp ginger, ground (2 g)
  • 1 tsp coriander, ground (2 g)
  • 1 tsp allspice, ground (2 g)
  • 1 tsp cloves, ground (2 g)
  • 1 tsp mace, ground (alternatively a dash of nutmeg) (2 g)
  • 1 star anise
  • 1/2 tsp orange zest, dried and ground (optional)
Instructions
  1. If using whole cloves, cinnamon sticks, star anise and such, grind them in a coffee grinder, blender or mortar. 

  2. Mix all the spices together in a small bowl and transfer mixture to a spice jar or any other airtight container. 

Recipe Notes
  • The flavor of freshly ground spices tends to be more intense. So keep that in mind and maybe use less of these spices.
