Chocolate-glazed Gingerbread Cookies

To me gingerbread is simply a must during this time of the year. While most people complain about gingerbread cookies being sold already in September, I could eat them year-round. This recipes makes it happen!  You only need four healthy ingredients to ditch store-bought and make the most delicious homemade version whenever you feel like having them. The flour free isn’t even to far from the original which is mainly made of nuts, dried fruit and christmas spices.

If you decide to make chocolate from scratch, you end up with raw vegan cookies and retain even more nutrients. I would usually use store-bought bittersweet chocolate to save some time, though.

Ingredients for 4-6 cookies, depending on size

  • 1 cup nuts, e.g. walnuts, pecans, almonds (I used pecans)
  • 1 cup dates, pitted
  • 1 tsp gingerbread seasoning*
  • Optional: a pinch of salt
  • 80 g (3 oz) dark chocolate**
  • optional: wafers

You will also need:

Directions

  1. Place the nuts into a food processor and mix until chunky.
  2. Then add the dates and spices and blend it all up until a sticky mixture forms.
  3. Roll into balls, flatten them with your hands and leave in the fridge to set while preparing the chocolate ganache.
  4. Start melting the chocolate over a gentle heat.
  5. Once hardened, transfer the cookies to the fridge and store them there, especially if you’re using homemade chocolate.

Notes:

* You can make your own by melting cacao butter, cacao powder and liquid sweetener, e.g. maple syrup over a gentle heat. Add a pinch of salt and to make it even more chocolaty, a pinch of vanilla. 

** You can make your own gingerbread seasoning.
